Sheet Pan Nachos

This is going to be a new family dinner favorite! Chris, the kids and I love Mexican cuisine and incorporate it into our dinner meals at least once a week if not more. With the kids being in multiple sporting activities, I wanted to find some recipes that were quick to throw together but able to feed our entire family. Hello sheet pan dinners! These nachos can be customized to whatever your family likes best, and it’s yet again easy clean up. Win win!

Ingredients Used:

1 Bag of Tortilla Chips

1-2 Packs of Taco Seasoning

1 Rotisserie Chicken

1 Can of Pinto Beans

1 Can of Black Beans

1 Can of Corn

1-2 Jalepenos

Shredded Mexican Cheese

Toppings of Choice

Here is how you make these delicious nachos:

1: Line the baking sheet with the entire bag of tortilla chips. You can use less if you’re making these for just yourself.

2: Shred the rotisserie chicken and then sprinkle the taco seasoning over it making sure to coat all the pieces. Now set aside. (You can use canned chicken or even shred your own baked chicken. I personally just like the convenience of using a rotisserie chicken.)

3: Layer the black beans, corn and pinto beans on top of the tortilla chips followed by the shredded chicken.

4: Now sprinkle the cheese on top making sure to cover most of the chicken. Throw on a few cut up jalapenos and bake at 400 degrees for 8-10 minutes. (If you prefer a less spicier nacho, leave the jalapenos off.)

5: Add on your favorite toppings and enjoy! Some of our go to favorites that we love are guacamole, salsa, queso and sour cream. They add extra flavor that everyone loves! Again, you can make this as customizable as you prefer.

So whether you are rushing home late from work or have to rush out the door to baseball/soccer practice, you can still whip up a delicious, inexpensive dinner that not only feeds your entire family but is quick to make and clean up.
