With summer quickly approaching, I wanted to try some new recipes that would be perfect for afternoons by the pool. I love simple recipes that can be thrown together in a matter of minutes yet be packed full of flavor and color. This Avocado Feta Dip recipe is that exactly! Chris and I thoroughly enjoyed this dip and can’t wait to share it with our friends and family this summer.
Ingredients:
2 tbsp olive oil
1/3 of a red onion, diced
1/4 cup cubed Feta cheese
1 tbsp minced garlic
2 Roma tomatoes, diced
1 cup chopped cilantro
Dash or two of salt
2 avocados, sliced
Tortilla Chips
To make this delicious dip, follow these super simple steps:
1: Grab a mixing bowl and pour in the olive oil. Then add in the diced red onion and Feta cheese. I personally love Athenos Feta crumbles and use about 1/2 of the container when making this dip. Mix the ingredients together!
2: Add in your minced garlic, diced tomatoes, chopped cilantro and salt. Make sure to mix everything together once again.
3: Carefully add in the sliced avocados and stir everything around making sure not to mash the slices of avocado. Some people prefer small chunks of the avocado which is totally fine as well. You just want to make sure to leave it a thicker texture versus mashed.
4: Serve with your favorite tortilla chips or even crackers! I personally love Siete Grain Free Tortilla Chips and highly recommend them.
