Goat Cheese Tomato Dip Recipe

My family loves a good dip especially when goat cheese is included so I tried out the Goat Cheese Tomato dip. This turned out to be the perfect weekend afternoon snack and the kids loved it. It was pretty easy to make and took about 40 minutes from start to finish.
INGREDIENTS
1 tablespoon extra-virgin olive oil
½ cup finely chopped white onion
2 medium garlic cloves, pressed or minced
1 tablespoon + 1 teaspoon chopped fresh basil or ¼ teaspoon dried basil
¼ teaspoon dried oregano
1 ½ teaspoons white wine vinegar
1 can (15 ounces) fire-roasted crushed tomatoes
½ teaspoon kosher salt or ¼ teaspoon fine sea salt
Freshly Ground Black Pepper
4 ounces goat cheese
Whole grain baguette or crispy bread
INSTRUCTIONS:
Preheat the oven to 375 degrees
In a medium saucepan, warm the olive oil on medium heat. Add onion and sauté for 3 minutes, then add the garlic, 1 tablespoon of the fresh basil (or ¼ teaspoon dried), or oregano, and sauté for 1 minute.
Add the white wine vinegar and saute for 1 minute, then add the tomatoes, salt, and pepper. Reduce the heat, cover, and simmer to a light bubble for 10 minutes.
Taste and add seasonings if needed. If you want it a little spicier, add red pepper flakes
To serve, add tomato sauce to a small baking dish or ramekins, then add goat cheese. Bake until the cheese is warmed through for about 15 minutes. If desired, broil for a minute or two to brown the top of the cheese.
Let cool for a few minutes, then top with the remaining 1 teaspoon fresh basil and drizzle with olive oil. Serve warm with bread on the side.
