Now that the kids are out of school for the summer I am preparing more snacks and meals for them to have. I like to make sure they are getting enough healthy nutrients so that they don’t over snack, which is very easy to do. I’ve made these No Bake Energy balls in the past and they love them. You keep them in the fridge and can be pulled out when ready to eat. Here is a basic recipe using 5 ingredients that you could have in your pantry.

INGREDIENTS:

I doubled the original recipe. Here are the measurements I used.

4 Cups of Old Fashioned Oats

½ Cup Honey

1 Cup Creamy Peanut Butter

1 Cup Chocolate Chips

2 teaspoons Vanilla Extract

Extras you can add:

Shredded coconut

Flaxseed

Seasalt

M&M’s

INSTRUCTIONS:

Measure oats, honey, peanut butter, chocolate chips and vanilla extract, or any extras you want to add, and pour in a mixing bowl. Mix together till all ingredients are evenly mixed together.

Put it in the fridge and let it chill for at least an hour, maybe longer.

Once the consistency is whole, use a cookie dough scoop to portion small size amounts then roll evenly into a ball.

They are ready to eat!! You can let them sit in the fridge overnight to harden a little longer. These are so yummy and something the kids will never turn down. Let me know if you try them!
