One Sheet Pan Chicken & Veggies
This is one of my easy, throw together dinners during sports season. It takes maybe 45 minutes from start to finish, but does not take a ton of effort and is so easy to clean up. The kids really enjoyed this meal too.
Ingredients:
6 Chicken Breasts
2 sweet potatoes
1 yellow onion
1 yellow pepper
1 red pepper or 5 small red peppers
Baby Bella Mushrooms
1 Broccoli stalk
Extra Virgin Olive Oil
Salt
Pepper
Minced Garlic
Oregano
basil
Instructions:
Gather all ingredients, grab your sheet pan, knife and Preheat oven to 400 degrees. Cover pan with foil (Easier clean up)
Chop peppers, bell peppers, mushrooms, onion and broccoli. Add to a mixing bowl then set to the side.
Chop sweet potato in small bite sized pieces, add to the pan and spread evenly. Drizzle with olive oil, minced garlic, season with oregano and basil. Bake in oven for 15 minutes
When potatoes are done, add cubed chicken, chopped veggies to the pan then drizzle more olive oil and season with salt & pepper. Put back in the oven for 20 minutes or till cooked thoroughly.
When done, it is ready to serve!
