Pumpkin French Toast

Give me all things pumpkin! I have been on a fall decorating frenzy lately and wanted to incorporate fall recipes as well. One of my kids favorite go to breakfasts on the weekends is French toast which is why I knew I wanted to whip up a fall French toast recipe that included pumpkin. I must say, this one was a BIG hit with my kids!

Ingredients Used:

4 large eggs

2/3 cup milk

1/2 cup pumpkin puree

1 tsp vanilla extract

2 tbsp sugar

1 tsp cinnamon

1/4 tsp nutmeg

12 slices of bread

To make this quick hearty fall breakfast, follow these simple steps:

1: In a mixing bowl, crack the eggs and then carefully add the milk, pumpkin puree and vanilla extract. Gently mix together.

2: Add in the sugar, ground cinnamon and nutmeg making sure to mix everything together until smooth.

3: Place a skillet (or frying pan) on low-medium heat on the stove allowing it to heat up for a few minutes.

4: Carefully dunk a piece of bread in your batter mixture making sure to coat both sides of the bread completely. Gently shake off any excess mixture and place it in the skillet.

5: Cook on each side for about 2-4 minutes. If you prefer a crispier crunch, I recommend maybe even leaving it for about 5-6 minutes per side. You just have to make sure to not overcook the bread which can happen super easily.

6: Repeat these steps with your remaining bread. Once everything has been properly cooked, drizzle the pile of French toast with maple syrup. For an extra added touch, throw on some whipped cream and fresh fruit! Time to enjoy!

You could always customize this recipe to your own liking. If you prefer a strong pumpkin taste, I would recommend adding more pumpkin puree whereas those that only like a hint of pumpkin, add a little less. It’s all about what you enjoy most!
