Easy Corn Dip

This is the ultimate summer dip! Goes great out on the lake for a snack, or even for a gathering that will need to feed 10+ people. This recipe makes quite a bit. If you want a smaller portion, cut the recipe in half and it will be just as delicious! 

INGREDIENTS:

16oz Sour Cream 

Green Onions – Chopped 

4 cans of Corn – Drained 

16oz Cheddar Cheese

2 Cans of Rotel 

INSTRUCTIONS: 

In a mixing bowl add your drained corn, drained rotel, and green onion. If you want it to be spicy, use the hot rotel or the one with chile’s or poblanos. If you don’t want it super spicy, use the original rotel. I used 1 can of hot and 1 can of original.

Mix together till mixed evenly.

Add in your sour cream and mix together. 

Lastly, add in the shredded cheese and mix.

You will notice it will have some liquid to it. Place in the fridge for about an hour or so to cool and the liquid will mix in together with the ingredients. 

Put mixture in a serving dish and serve with Frito Scoops. 

So simple, yet so yummy! It’s light and makes for a refreshing summer dip for the pool or the boat! Let me know if you try it!
