Everyone that knows me knows just how much I love my air fryer. It helps cut down on dinner prep making my family’s busy schedules seem less stressful. Between running my business, jamming on homework with my kids and running to their sports practices and simply being a mom, I always have somewhere to be and something to do. So being able to cut down on dinner preparation allows for more family time which I’m all about!
Ingredients Used
2 cups of rotisserie chicken, cooked
1 container of guacamole
1/2 cup of salsa
Flour Tortillas (I love Mission’s “Carb Balance Soft Taco Flour Tortillas.”)
3/4 cup cheese
1 cup of sour cream
To make these yummy taquitos, you simply follow these easy steps.
1: In a mixing BOWL, add in the chicken, cheese and salsa which you will mix until everything is blended together.
2: On a cutting BOARD, lay out one of the tortillas. Fill the tortilla with the mixture and roll it up but be careful to not overfill the tortilla. Place the rolled up tortilla in the bottom of the air FRYER, and continue this process until the bottom of the air fryer is filled.
3: Set the air FRYER to 370 degrees and cook for 15 minutes.
4: Once the air fryer is done, place the taquitos on a PLATE and top with whatever toppings you enjoy most! For me personally, I like to add guacamole, salsa and sour cream.
My kids love this recipe for the fact they can pick whatever toppings they want and create their own customized taquitos. The simplicity and taste of these is why it lands in our dinner rotation at least every couple weeks. It’s a family hit, and I hope your family loves it just as much as mine does!
