With Chris being back on Keto, we have been trying some different healthier recipes including this one here which was a hit with not just us but also the kids. These avocado baked eggs are super easy to make and only require a few ingredients that I guarantee are staples already in your kitchen. So whether you’re meal prepping for the week or rushing to get breakfast made, you have to give this recipe a try!

Ingredients Used:
1 avocado
2 small eggs
1/4 tsp paprika
salt & pepper

Follow these simple steps to whip up an avocado baked egg:
1: Preheat your oven to 400 degrees Fahrenheit, and line a baking sheet with parchment paper.
2: Cut the avocado in half and remove the pit. I would recommend gently scraping out a little of the avocado in the middle to allow room for the entire egg.
3: Crack an egg into each side of the avocado and season with paprika, salt and pepper. If you aren’t a big fan of spices, you can leave the paprika out.

4: Bake for about 15-20 minutes and serve! If you want a runnier egg, then stick to lesser time.
