Buffalo Chicken Tortilla Hack

I found this hack with tortillas and thought others might enjoy it too! It’s something I’ve never done before, but it was perfect for sharing with many people if you are hosting a get-together this summer. You can also get creative with your ingredients and change it up.

Ingredients: 

8 count Flour Tortillas Burrito size  

Chicken Tenderloins – Boneless Skinless or 4 Chicken Breasts Boneless Skinless

1 Bell Pepper 

1 Yellow Onion 

2 Cups of Mozzarella Shredded cheese 

Franks Red Hot Buffalo Wing Sauce

Instructions: 

Preheat the oven to 350 degrees

Grab 2 sheet pans – one large and one medium

First thing you will need to do is cook your chicken. I cooked it on the stove top, but you can bake it in the oven, whichever you prefer. Once cooked, chop into small bite sized pieces. 

While the chicken is cooking, chop your bell pepper and onion. I used about a cup each. 

Step 1 – lay out your tortilla’s on the large pan. Make sure half of the tortilla is hanging off the pan. You will use 7 tortillas on the bottom and no pan space should be shown. You will use the other half of the tortilla to fold once other ingredients are added. 

Step 2 – Layer the tortilla with mozzarella cheese. Add the chopped chicken, bell pepper, onion, and then add more mozzarella cheese on top. Feel free to add as much cheese or other toppings as you’d like. Drizzle the Franks Red Hot Buffalo Wing Sauce on top. 

Step 3 – Start with the sides and fold over the excess tortilla to the center then fold the 2 ends to complete the burrito style. Add the last tortilla to the top. You should not see the inside of the burrito. 

Step 4 – Add butter or Pam spray to the top of the tortillas. You will use the bottom of the smaller pan to lay on top of the tortilla. 

Step 5 – Put in the oven for about 15 minutes or until crisp on the outside. Cut in pieces and serve with Blue cheese or Ranch and a little drizzle of buffalo sauce. 

It seems like it might be complicated, but it wasn’t!! This was a great lunch to share with guests and very filling. If you are needing to feed many guests, this is the way to go and you hardly have any dishes to clean up after! Let me know if you try it!
