Chicken Tortilla Soup

With school being back in session and the kids sporting activities in full swing, I knew it was time to whip out the crockpot. One of our family favorite recipes is my chicken tortilla soup which is honestly so easy to throw together and cook all day while at work. That way when you get home, all you have to do is add your favorite toppings and enjoy!

Ingredients Used:

1 rotisserie chicken

2 cans corn, drained

2 cans black beans, drained

2 cans of Rotel

1 onion, diced

1 red bell pepper, diced

2 tbsp cilantro

1 tbsp chili powder

1 tbsp garlic powder

2 tbsp extra-virgin olive oil

chicken broth

sour cream

2 avocados

Mexican cheese

tortilla chips (or strips)

To make our family favorite, follow these easy steps:

1: Pull all the meat off the rotisserie chicken and throw it into a bowl. To shred it easily, grab a hand mixer and set it to low speed making sure to evenly shred all the pieces.

2: Coat the bottom of your crockpot with the extra-virgin olive oil. Now add in your shredded chicken as well as the corn, black beans, rotel and diced onion. Make sure to drain both cans of corn and black beans before adding them into the crockpot.

3: Sprinkle the cilantro on top making sure to spread it evenly over your ingredients. Now add the chili powder and garlic powder. If you want yours a little on the spicier side, you could throw in some paprika or increase the child powder even. Totally customizable to what sounds best to you!

4: Dice up the red bell pepper and then add it to the crockpot. Carefully, and slowly, add in the entire container of chicken broth while stirring everything together until it all appears to be mixed up.

5: Cover the soup and set your crockpot to low for 8 hours. Once the soup has fully cooked, serve immediately with all your favorite toppings! Some of my personal favorites are cut up avocado slices, sour cream and shredded cheese. The kids love to grab some tortilla chips and crunch them on top of their soup. You can 100% customize the toppings to whatever you prefer!

Hopefully this recipe simplifies your dinner rush some and is a hit with your family! With fall right around the corner, this chicken tortilla soup would be a great option for upcoming office potlucks, gatherings with your girlfriends or even when hosting your entire family for game night.
