With the colder weather and slowly transitioning into the winter season, I thought what better way to stay warm than with a soup recipe! My husband and kids love when I whip up a soup in the crockpot that they can snack on throughout the day. One of our favorites is this Crockpot Tomato Basil Soup.
Ingredients Used:
3 (28 oz) cans of whole peeled tomatoes
1 can tomato paste
3 cups chicken broth
1 cup half-&-half
1 onion, diced
2 tbsp minced garlic
1/2 tsp crushed red pepper
1 tbsp basil
1 tsp oregano
Follow these simple steps to create this delicious soup:
1: Add all 3 cans of the whole peeled tomatoes including the juice into your CROCKPOT. Now sprinkle in the oregano, basil and minced garlic followed by the crushed red pepper.
2: Add the half-&-half as well as the chicken broth and stir everything together. If you wanted to add a little less or a little more chicken broth, you can. This recipe can be altered to your specific liking. Some friends of mine like to add more of the half-&-half to give it a creamier texture, and it tastes just as great.
3: Go ahead and turn your crockpot to high heat and let this cook for 2 hours. While this begins to cook, you’ll want to sauté the onion in a skillet until it looks caramelized. Once the caramelization is set, add the diced up onion into the crockpot and stir everything together again.
4: Once everything has cooked together, scoop out the soup into a soup BOWL and top with whatever toppings you prefer. Personally, my family loves to add some shredded cheese onto the top and serve the soup with a side of grilled cheese. What can I say, we love cheese!
