Mahi Mahi Air Fryer Tacos

I wanted to start cooking again this week and kicked it off with Taco Tuesday! Fish tacos are always what I order on vacation so wanted to try them out for myself. I found a few recipes on the internet but really didn’t find one that I loved so decided to experiment and put one together from scratch. I had an idea of what ingredients I usually LOVE on tacos so went off past experiences with Fish tacos to come up with this one.

Ingredients

Mahi Mahi Fish

1 Tbsp Paprika

1 Tsp Cayenne

1/2 Tsp Onion Powder

1/2 Tsp Garlic Powder

1 Jalepeno Pepper (minus seeds)

1/2 cup fresh cilantro chopped

Juice from 1 lime

1 Tsp Oregano

1/2 Tsp Salt

1/Tsp Pepper

Mango Pineapple Salsa

2 Small Diced Mangos

1 Small Tomato Diced

1/2 Cup Diced Pineapple

1/2 Small Diced Red Onion

Juice of 1 Lime

Sea Salt To Taste

Cracked Pepper To Taste

Sauce

1 Cup Mexican Crema

1 Avocado

Juice From 1 Lime

1 Tsp Garlic Seasoning

Salt & Pepper To Taste

Instructions

Mix the below ingredients in a mixing bowl-1 Tbsp Paprika, 1 Tsp Cayenne, 1/2 Tsp Onion Powder, 1/2 Tsp Garlic Powder, 1 Jalepeno Pepper (minus seeds), 1/2 cup fresh cilantro chopped, Juice from 1 lime, 1 Tsp Oregano, 1/2 Tsp Salt, 1/Tsp Pepper. Pour all of these ingredients into a ziploc bag Slice Mahi Mahi into 2 inch sections and add to the Ziploc Bag.

Place in Fridge for 30 minutes to marinade

Mango Pineapple Salsa

Dice Mangos, Tomato, Pineapple and 1/2 of a Red Onion and mix together in a mixing bowl. Squeeze in Juice from 1 Lime. Add Salt and Pepper to Taste. Place in refrigerator

Sauce

Use Blender To Mix

Mix Mexican Crema, Avocado, Juice from 1 Lime, Garlic and Salt & Pepper. Blend together until creamy in Blender. I use my Ninja Blender.

Set aside

Preheat the Air Fryer to 350 Degrees for 5 minutes. Once it’s preheated then add the Mahi Mahi and marinade to the air fryer for 15 minutes at 350 Degrees. Once done, serve in flour or corn tortillas and add the salsa and sauce to top it off. Serve with rice or the side of your choice!

We LOVED the way these turned out. They were super light and yummy. Jackson ended up asking for seconds and we definitely will be trying this recipe out again soon.
